Preheat the oven to 375°F.

Heat a drizzle of olive oil in a large pan over medium heat. Add the ground beef and cook until browned, breaking it up as it cooks.

Stir in the taco seasoning and water according to the package instructions.

Add the black beans, corn, 1/4 to 1/2 cup of the cilantro, and 3/4 cup of the sour cream. Stir until everything is well combined.

Spread a layer of corn chip dippers or Fritos in the bottom of a large baking dish.

Spoon the beef mixture evenly over the chips, then top with the shredded cheese.

Bake for 10 to 15 minutes, until the cheese is melted and bubbly.

Top with the remaining cilantro, the rest of the sour cream, and any other toppings you like before serving.
