Preheat oven to 325°F.

Pat the chuck roast dry. Rub all sides with olive oil, salt, and pepper.

Place the roast in a Dutch oven. Scatter the garlic cloves around it and drizzle lightly with olive oil.

Pour the 1 cup of red wine around the roast (not on top).

Cover tightly with the lid.

Roast for 3–3.5 hours, until the meat is very tender and pulls apart easily. It will be dark, this is ok. Check at 3 hours.

Optional: remove the lid for the last 20–30 minutes to reduce the sauce and deepen flavor.Rest the roast 10 minutes before slicing or shredding. Mash the roasted garlic into the pan juices and spoon over the meat.
