Sweet Potato Cheeseburger Skillet

A dish I often whip up when I don’t know what else to make! You can easily switch up the veggies you use as well as the spices. Taco seasoning works great too!

Heat a large pan over medium high heat and add a drizzle of olive oil. Add the diced sweet potatoes and sauté for about 1 minute. Pour in 1/2 cup water, cover with a lid, and cook until the sweet potatoes start to soften, about 5 to 7 minutes. Remove them from the pan and set aside.

In the same pan, add a little more olive oil if needed, then add the diced onion. Sauté for a couple of minutes until slightly softened.

Add the ground beef, season lightly with salt and pepper, and break it apart as it cooks. Cook until the beef is mostly browned.

Stir in the diced red bell pepper and cook for about 1 minute.

Return the sweet potatoes to the pan. Season again with salt and pepper to taste and cook everything together for a few minutes until heated through and fully cooked.

Sprinkle in the grated cheddar cheese and stir gently until melted into the mixture.
