Lazy Beef Pot Pie

I’ve made this with chicken before but the ground beef version is SO delicious too. Alfredo sauce, mirepoix, crescent rolls, done. I wanted to drink the sauce straight from the pan. Just a handful of ingredients and it comes together so fast.

Alfredo Sauce

I use one 15 oz jar of store bought alfredo sauce here, which is the easiest route. If you want to make it from scratch, melt 2 tablespoons of butter in a pan, add a cup of heavy cream, and stir in half a cup of parmesan until smooth.

Crescent Rolls

You can also use puff pastry or a store bought pie crust if you prefer a more traditional potpie crust.

Ground Beef

This recipe works just as well with 2-3 cups of shredded chicken if you want to keep it more classic.

Mirepoix

If you can’t find this, just dice 2 stalks of celery, 2 carrots, and 1 yellow onion finely and you’ll have the same thing.

Storage

Leftovers keep in the fridge for up to 3-4 days in an airtight container. To make it ahead, prep the filling up to 2 days in advance and store it in the fridge, then top with crescent rolls and bake when you’re ready. If you’re bringing it to a friend, assemble it unbaked, cover tightly, and let them pop it in the oven at 375°F for 15-20 minutes. The filling also freezes well for up to 3 months, just thaw overnight in the fridge and add fresh crescent rolls before baking.​​​​​​​​​​​​​​​​

    Preheat your oven to 375°F.

    In a skillet over medium heat, melt the butter. Add the mirepoix and ground beef, breaking the beef apart as it cooks. Cook for 7-8 minutes, stirring occasionally, until the beef is fully browned and the vegetables have softened. Season with salt and Italian seasoning.

    Stir in the alfredo sauce. If the mixture feels too thick, add the water a little at a time to loosen it up.

    Cut the crescent rolls into 10 pieces and arrange them over the top of the filling.
