These are the seven dinners from last month that stayed in the rotation, meaning I made them, my family ate them without complaints, and I found myself making them again before the month was even over! No elaborate techniques here, no ingredients you’d have to hunt down, just really good food! Some of these started as recipe testing for content and are now the most requested meals in my house! All seven recipes are linked below, I hope at least a few of them earn a permanent spot in your rotation too.

1. Creamy Tortellini Spinach and Artichoke bake
I love love love a tortellini bake! Especially when they are this easy to throw together. Add additional spices if you’d like but both the broth and the dip brings a lot of flavor!

2. Creamy Elote Pasta
This will be my new go to creamy pasta when I want something fast but still really flavorful! I used half a pound of rigatoni, browned up some chicken sausage, added in green onions for a little bite. The real shortcutis the sauce, I used 8 ounces of Trader Joe’s Everything But the Elote dip.
If you’ve never had elote, it’s basically Mexican street corn flavor. creamy, tangy, a little cheesy, a little chili lime situation, this dip captures all of that. Once it melts into the pasta with a splash of pasta water, it turns into the creamiest sauce without needing cream or cheese.

3. Cheeseburger pasta
Nothing beats a dinner that comes together in less than 30 minutes especially if the whole family will eat it! If you think your kids will be able to spy the carrots you can cut them out, the celery and onion blends in so easily with the cheese and pasta 🍝

One of my favorite gnocchi recipes! Especially if you want something hearty yet something light and fresh!

5. Artichoke Chicken Bake
If you need a filling and flavorful dinner, try this one out! Super creamy and easy to make, make great leftovers too! I served with about 1 cup of basmati rice and each serving packs 55 grams of protein!

6. Chimichurri Steak Salad
I’m not sure why I don’t eat or make chimichurri sauce more often? It’s so delicious! In this recipe I used it as a sauce with steak, potatoes, tomatoes and cucumber. So so fresh yet still a real meal

7. French Onion Pasta
I’ve been eyeing this French onion soup at Trader Joe’s for a while with hopes of adding it to pasta. I finally tried and it did NOT disappoint 🤩✨ this recipe is definitely a keeper. Serve as is or with chicken or steak!

8. Honey salmon rice bowls
If you’re not making salmon bowls on repeat you’re missing out. they’re one of those meals that makes the week easier, quick to put together, great for meal prep, and they actually reheat well which not everything does. This one has a honey glaze that comes together in a few minutes and makes the whole thing feel a little more special 🫶
