Unless you’ve been living under a rock for the last few years, you’ve seen the viral cottage cheese, ground beef, and sweet potato bowl all over the internet. Honestly, I’d never actually tried it myself, not because I didn’t think I’d like it, I just never got around to it. But after discovering cottage cheese queso recently, I knew I had to try this combo with it. And wow, this is a keeper. I’d be surprised if it doesn’t become a go to recipe for you too.

Ingredients
Sweet potatoes
These are the base and the “shell” for everything else, sub regular potatoes if that’s what you have on hand.
Ground beef
Ground turkey or chicken works as a leaner swap, but don’t skip on the taco seasoning
Queso
The cottage cheese is what makes the queso creamy and high protein without heavy cream, if you’re not a cottage cheese person, blend it well, the texture disappears completely
Storage
Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in the microwave or oven until warmed through, add fresh avocado after reheating rather than storing it with the leftovers.

Preheat oven to 375°F. Halve the sweet potatoes, rub with olive oil and salt, and place flat side down on a sheet pan as is or lined with parchment paper. Bake for about 1 hour, until soft.

Meanwhile, brown the ground beef with half the taco seasoning or an entire packed, depending on your preference, and water, according to package instructions, until fully cooked. Remove from heat.

In a blender or food processor, combine the cottage cheese, cheddar cheese, and remaining taco seasoning or one full packet. Start with a half and add more if you like. Blend until smooth, this is your queso.

Once the sweet potatoes are out of the oven and slightly cooled, mash the tops and top each with ground beef and queso. Serve with avocado on the side.
