Lazy Lasagna
Lasagna is one of my absolute favorite dishes, but I never get around to making it because there’s just so many steps involved! if I have the time I love making it, but with young kids and a full-time job, the opportunity for a lot of time in the kitchen rarely presents itself. tonight I made this lazy or easy version of it and it’s just be as good, if not better than the original version! let me know if you try it 🫶✨🍷

Ingredients
Ground beef
Browning it first builds flavor through caramelization, which is where a lot of the depth comes from.
Vodka sauce
Richer and creamier than a straight marinara, so it mimics that layered, baked lasagna flavor without the extra steps. You can substitute for regular marinara sauce if you prefer
Beef bone broth
I love adding this for extra nutrition and flavor, but you can also substitute for regular beef broth
Lasagna noodles, broken
While it wouldn’t necessarily be lasagna, you can substitute this for another large pasta shape if that’s all you have on hand
Storage
Store leftovers in an airtight container in the fridge for up to 4 days. To freeze, let it cool completely, portion into airtight containers or freezer bags, and freeze for up to 3 months. Thaw overnight in the fridge before reheating.

Add some olive oil to a large pan or skillet over medium heat. Add the diced onion and ground beef. Break apart the ground beef and let it brown while the onion sautés.

After a few minutes, add the Italian seasoning and salt. Stir to combine everything.

Once the beef is fully browned, add the vodka sauce and beef bone broth or beef broth. Stir to combine and continue cooking for a few more minutes until everything is heated through.

Dollop in half of the ricotta cheese and stir until fully melted into the sauce.

Break each lasagna plate into 2 longer pieces and place them into the sauce. Use a spatula to gently press them down into the liquid.

Lower the heat to low-medium and cover with a lid. Cook for 10 minutes.

Dollop the remaining ricotta cheese on top. Place the lid back on and cook for 5 more minutes.

Sprinkle the grated Parmesan cheese on top and cook for a few more minutes until the cheese has melted.
