Chicken Alfredo Lasagna

This lasagna is ridiculously easy to make, and it comes out so flavorful and comforting. It’s chicken Alfredo in lasagna form, thick, creamy, and delicious.

Ingredients

Chicken breast

The main protein; browning it first creates flavor in the pan that carries through the whole dish. Swap: rotisserie chicken or thighs both work if you want to skip the browning step

Onion

To create a savory base and a little natural sweetness once it turns translucent. Swap: shallot or a smaller amount of yellow onion works fine if white onion isn’t on hand.

Broccoli

Fresh or frozen. frozen peas, spinach, or asparagus pieces would all sub in easily.

Alfredo sauce

I used jarred sauce but you can easily make your own Alfredo sauce too

Cheeses

Swap: any melting cheese (like provolone) can stand in for the mozzarella, and Parmesan can be swapped for Pecorino for a saltier bite.

Storage and Freezing

Let the dish cool to room temperature, then transfer to an airtight container. It’ll keep in the fridge for 3-4 days. Reheat in a skillet or microwave.

This freezes well for up to 2-3 months in an airtight, freezer-safe container. For best texture, slightly undercook the noodles before freezing, since they’ll continue to soften once reheated. Thaw overnight in the fridge, then reheat gently on the stovetop with a little extra broth or cream stirred in. The sauce tends to separate a bit after freezing, so a slow reheat with some added liquid helps bring it back together.

    Season the chicken breast with salt and pepper on each side.

    Heat the olive oil in a skillet over medium-high heat and brown the chicken a couple of minutes per side, until fully cooked through.

    Remove the chicken from the pan, let it cool, then shred or dice it into small pieces.

    Add the onion back to the pan with the ¼ cup of broth and sauté a couple of minutes until translucent.

    Add the salt, black pepper, and garlic seasoning.

    Add the diced chicken back and also add broccoli back into the pan.

    Stir in the Alfredo sauce and the 2 cups of chicken broth, combine, and season to taste.

    Split the lasagna plates into two pieces each and add them lengthwise into the sauce, pressing down gently, cover, and cook about 10 minutes.

    Remove the lid, sprinkle the mozzarella and Parmesan over the top, cover, and cook 3 to 4 more minutes.

    Remove the lid again, grate a little extra Parmesan over the top, and cover for 30 more seconds.

    Remove from heat and serve.
