Skillet Mashed Potatoes

This is such a nice, warm dish, so flavorful. Perfect for the holidays and still easy enough for a weeknight. I love how the skins get a little crisp, the broth adds so much flavor, and it all comes together in one pan.

Instructions

  1. 1

Halve the potatoes and peel the garlic cloves.

  2. 2

In a large pan, drizzle in some olive oil and let it heat up over medium heat. Add 2 tablespoons of butter and let it melt.

  3. 3

Place the halved potatoes cut side down in the pan. Add the garlic cloves around them and sauté for 1–2 minutes.

  4. 4

Season lightly with salt, then pour in 1 cup of chicken broth.

  5. 5

Cover with a lid and cook for 20 minutes, or until the potatoes are soft and easily pierced with a fork.

  6. 6

Once the potatoes are tender, mash everything directly in the pan.

  7. 7

Add 1/3 cup heavy cream and the remaining 2 tablespoons of butter. Mash until creamy and smooth.
