Roasted Tomato Pizza

Preheat oven to 425F

On a large baking sheet, spread the tomatoes, cherry tomatoes, onion, bell pepper, and garlic. Drizzle with olive oil and sprinkle with salt. Toss to coat.

Bake for 35โ45 minutes. Transfer the roasted vegetables to a blender or food processor. Blend until smooth.

For a thicker sauce, pour the blended mixture into a saucepan and simmer on low heat for 10โ15 minutes, stirring occasionally, until it reaches your desired consistency.

Spread out about 1 cup of sauce over a pizza crust, top with mozzarella cheese and bake in the oven at 425F for 10 minutes.
