The Everything Protein Bake

A couple of weeks ago I made an egg bake with cottage cheese and sweet potato but today I decided to make it a little more hearty, and I added ground beef. No regrets this was so incredibly good. I had this for dinner, but it’s definitely perfect for breakfast or lunch too.

Preheat oven to 375°F. Add the eggs and cottage cheese to a baking dish and mix together until combined.

In a large pan over medium-high heat, brown the ground beef until fully cooked, breaking it apart as it cooks. Add the cooked beef to the baking dish.

While the beef cooks, dice the sweet potatoes and onion. In the same pan, add a drizzle of olive oil and sauté the sweet potatoes and onion for a few minutes.

Add 1/4 cup water, cover with a lid, and cook until the sweet potatoes are softened.

Add the spinach to the pan and cook until wilted.

Add the sweet potato, onion, spinach, shredded cheddar, and crumbled feta to the baking dish and stir everything together.

Drizzle a little olive oil along the sides of the baking dish.

Bake for about 30 minutes, until the eggs are set.
