Salsa Verde Chicken and Couscous

I’ve been making this meal for years when I need something easy and quick! Couscous is so easy to make and the salsa verde and chicken goes together so perfectly! If you don’t like thighs you can substitute for chicken breast too.

Heat a large skillet over medium heat and add a drizzle of olive oil.

Add the chicken thighs and cook until lightly browned on each side.

Pour in the salsa verde and about ½ cup of water.

Reduce the heat and let it simmer until the chicken is fully cooked.

While the chicken cooks, prepare the couscous according to the package instructions.

Once the chicken is done, use two forks to shred it in the skillet and mix with the sauce.

Serve the shredded chicken over the couscous.
Notes & Tips
Go easy on salting the chicken, until serving, as the salsa brings a lot of saltiness
