Creamy Cheddar Fresh Tomato Pasta

Ever since starting to make simple pasta sauces like this it’s hard to stop. It’s just so incredibly easy and full of flavor! If you want an even smoother sauce you can mix it in a blender after removing the lids but I personally like the texture.

Boil your pasta according to package directions. Drain and set aside.

Add a drizzle of olive oil to a large pan over medium-high heat. Place tomatoes cut side down and sauté for about a minute.

Add a lid and lower the heat to medium-low. Let the tomatoes steam for 7-8 minutes until the skins lift off easily, then remove them with a fork or scissors if needed.

Stir and mash the tomatoes, then add the salt, basil, and garlic seasoning and stir to combine.

Add the heavy cream and shredded cheddar and cook on low for about a minute, stirring until you have a smooth, cheesy sauce.

Toss in your cooked pasta and stir to coat.
