Heat olive oil in a large skillet over medium-high heat. Add the diced onion and sliced mushrooms, and sauté for about 2 minutes, until they begin to soften.

Stir in the sliced chicken sausage. Cook for another 4–5 minutes, until the sausage starts to brown and the onions are translucent.

Add the tomato paste, Dijon mustard, and soy sauce. Stir to coat everything evenly and cook for 1 minute to deepen the flavor.

Pour in the chicken broth and heavy cream. Stir well, bring to a gentle simmer, and cook for 5–10 minutes, or until the sauce thickens and reduces slightly.

Serve over basmati rice and enjoy warm.
