Chicken Fajita Stuffed Peppers

By Frida Sofia60 min totalServes 4-7 servings

These chicken fajita stuffed peppers take everything you love about a fajita platter and bake it right inside a bell pepper. Seasoned ground chicken, black beans, basmati rice, salsa, and melty Mexican cheese come together in one hearty filling that feeds the whole family.

The peppers get a quick head start in the oven, and then it all comes together for a final bake. Top them with creamy avocado, fresh cilantro, and a dollop of sour cream!

Why You'll Love This

  • •Feeds a crowd. One batch makes 7 to 8 stuffed peppers, perfect for family dinners or meal prep.
  • •Protein packed. Lean ground chicken and black beans keep these filling and satisfying.
  • •Customizable. Swap the protein, change the cheese, or pile on your favorite toppings.

Ingredients

Bell peppers

Choose peppers that stand upright on their own and have a wide opening. A mix of red, yellow, and orange makes the dish extra colorful (and they're a little sweeter than green).

Ground chicken

Lean ground chicken keeps things light. Ground turkey or ground beef work just as well.

Fajita seasoning

Store-bought packets keep this easy. If you prefer homemade, use about 4 tablespoons of your own blend.

Storage

Fridge: Store leftovers in an airtight container for up to 4 days.

Freezer: Wrap cooked, cooled peppers individually and freeze for up to 3 months. Thaw overnight in the fridge.

Instructions

  1. 1

Preheat the oven to 375°F. Wash and dry the bell peppers, slice off the tops, and remove the seeds and ribs. Set the tops aside.

  2. 2

Place the peppers upright in an oven-safe dish or Dutch oven. Season with salt, pepper, and a drizzle of olive oil. Pour 1/4 cup water into the bottom of the dish and bake for 10 minutes. Pour out any liquid inside the peppers.

  3. 3

While the peppers bake, cook the basmati rice according to the package directions.

  4. 4

Dice the reserved pepper tops (discarding the stems) and the onion.

  5. 5

Heat 1 tablespoon olive oil in a large pan over medium heat. Add the ground chicken, diced peppers, onion, and fajita seasoning. Break the chicken apart and cook until browned and cooked through.

  6. 6

Stir in the black beans, cooked rice, 1 cup of the cheese, and the salsa until combined.

  7. 7

Fill each pepper with the mixture and bake for 20 to 25 minutes.

  8. 8

Top each pepper with the remaining 1/2 cup cheese and bake 5 more minutes, until melted.

  9. 9

Serve with sour cream, avocado, and cilantro.

Notes & Tips

Depending on the size of your bell peppers, you might have leftover stuffing. Great to use in tortillas, or you can freeze the filling!
