It’s not secret that shrimp is one of my absolute favorite foods. I love it in this dish combined with tortellini, asparagus and Parmesan.

Ingredients

Tortellini

I used cheese. Refrigerated tortellini is best. It will cook right in the sauce. Frozen works too. You’ll just need to cook it for a few more minutes.

Shrimp

Used raw, thawed and deveined.

Aglio e Olio seasoning

If you don’t have this, swap for a garlic heavy blend, plus some red pepper flakes

Store in a airtight container in the fridge for up to 3 days

    Toss raw shrimp, peeled and deveined with 2 tbsp olive oil and TJ’s Aglio e Olio seasoning. Heat a large skillet over medium high. Sear shrimp 1 - 2 min per side until pink. Remove to a plate.

    In the same pan over medium heat, add asparagus and sauté for about 2 minutes until just starting to soften. Add refrigerated cheese tortellini to the pan in a single layer, then add the Boursin and pour in the broth. Stir gently to combine. Cover and cook over medium heat for 3 - 4 minutes, stirring once halfway through, until tortellini is tender and sauce is creamy.

    Stir in Parmesan and season with salt and black pepper. Add the shrimp back in and let everything warm through for 1 minute.
