5 dinners I’d make if I had to feed 4 under $50 (Grocery List + Recipes)

Here are five dinners from Trader Joe’s that would make if I had to feed four people under $50!

PRODUCE

  • 1 bunch green onions

  • 2–3 cups baby spinach

  • ½ cup fresh cilantro

  • 8 oz cremini mushrooms

  • 1 yellow onion

MEAT & PROTEIN

  • 12 oz chicken sausage

  • 1 lb ground turkey

  • 1 package pineapple teriyaki chicken meatballs

PASTA & GRAINS

  • ½ lb rigatoni

  • ½ lb spaghetti

  • 1 bag basmati rice

  • CANNED & JARRED

  • 1 can full-fat coconut milk

  • 1 can chickpeas

FROZEN

  • 1 bag fire-roasted bell peppers and onions

SAUCES & CONDIMENTS

  • 8 oz Everything But the Elote dip

  • 1 jar peanut butter satay sauce

  • 1 bottle soyaki sauce

  • 1 jar red Thai curry paste

  • 1 jar chili crisp

  • 1 jar peanut butter

DAIRY

  • 5.2 oz Boursin cheese

  • ⅓ cup shredded Parmesan cheese

  • 2 tbsp butter

if you buy everything on the grocery list at once, you’re looking at around $64-70! Since you’re purchasing full-size ingredients, the five dinners themselves cost under $50 to make :) Plus, you’ll have leftovers like rice, spinach, green onions, soyaki sauce, and Parmesan cheese that carry over into the rest of your week

Creamy Elote Pasta

1. Creamy Elote Pasta

This will be my new go to creamy pasta when I want something fast but still really flavorful! I used half a pound of rigatoni, browned up some chicken sausage, added in green onions for a little bite. The real shortcutis the sauce, I used 8 ounces of Trader Joe’s Everything But the Elote dip. If you’ve never had elote, it’s basically Mexican street corn flavor. creamy, tangy, a little cheesy, a little chili lime situation, this dip captures all of that. Once it melts into the pasta with a splash of pasta water, it turns into the creamiest sauce without needing cream or cheese.
