One Pot Cheddar Chicken Sausage Stew

This stew is perfectly creamy but still brothy, thick and hearty. One pot, and won’t even mind staying inside when you have this on the stove.

Heat olive oil in a large pot or deep skillet over medium-high heat. Add chicken sausage and cook until well browned. Remove from the pot and set aside.

Reduce heat to medium and add diced onion to the same pot. Cook for 3–4 minutes until softened. Add garlic and red pepper flakes and cook for 30 seconds until fragrant.

Add potatoes, salt, and black pepper. Pour in chicken broth and bring to a gentle simmer. Cover and cook for 12–15 minutes, stirring occasionally, until potatoes are just fork-tender but not mushy.

Add diced broccoli or broccolini and cook uncovered for 3–4 minutes until tender and bright green.

Lower heat to low and stir in cream or milk. Add the sausage back to the pot and simmer gently for 2–3 minutes until warmed through.

Turn off heat and stir in Parmesan until melted and the broth is slightly creamy. Taste and adjust seasoning as needed.
