Creamy Chicken and Broccoli Pasta

This is an easy weeknight made with ground chicken, broccoli and protein pasta because tonight I needed dinner to be easy! I used Radiatori pasta since it’s perfect for a creamy sauce and it tastes delicious! Truly the best tasting protein pasta I’ve tried, tastes just like traditional pasta. My kids loved this too so using this pasta great way for kids to get protein in a delicious way!

Bring a large pot of salted water to a boil and cook the pasta for 10–12 minutes. Drain (do not rinse) and reserve about 1/2 cup of pasta water.

Heat olive oil in a large pan over medium heat. Add the diced onion and sauté for 2–3 minutes until softened.

Add the ground chicken, break it apart, and cook for about 1 minute. Add Italian seasoning, salt, and pepper, then continue cooking until mostly browned.

Add the broccoli, stir, then cover with a lid and let steam for a few minutes until slightly softened.

Remove the lid and cook until the chicken is fully cooked through.

Pour in the cream and stir, then add about half of the Parmesan cheese.

Add the cooked pasta and most of the remaining cheese. Stir everything together, adding a splash of reserved pasta water as needed to loosen the sauce.

Top with the remaining cheese, cover with a lid, and let it melt.
