Creamy Pumpkin Gnocchi with Chicken Sausage
You all know I love a simple quick meal! Definitely even better if it’s creamy and made with 4 ingredients 🧡
Ingridients
- 12 oz chicken sausage (I used garlic, but any flavor works)
- 2 cups chicken broth
- 12 oz pumpkin gnocchi (or regular gnocchi)
- 10 oz caramelized onion dip (or another creamy dip of choice)
- Olive oil, for cooking
- Optional: shredded Parmesan for serving
Instructions
1. Heat a drizzle of olive oil in a large skillet over medium heat. Add the chicken sausage and cook until browned and cooked through. Remove from the pan and set aside.
2. Pour the chicken broth into the same skillet. Bring to a simmer, then add the gnocchi. Cook 3–4 minutes, or until the gnocchi float and are tender.
3. Stir in the caramelized onion dip until creamy and smooth. Add the sausage back in and toss everything together.
