Potato and Sausage Bake
I’ve been making skillets like this for breakfast for a while, and honestly… not sure why I waited to try it for dinner. Potatoes, Italian sausage, onions, eggs, and cheddar all mix easily and taste so good. It’s simple, flavorful, and just the kind of meal you want on a weeknight. Ingredients
- 1 lb Italian sausage (mild or spicy, crumbled)
- 1 1/2 lb potatoes, diced (Yukon gold or red work well)
- 1 large onion, sliced
- 2–3 tbsp olive oil
- 1 1/2 tsp paprika
- 1 1/2 tsp cumin
- 2 tbsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 4 eggs
- 1/2 cup shredded cheddar cheese
Instructions
1. Preheat the oven to 425F
2. In an oven-safe tray, toss the diced potatoes with olive oil, paprika, cumin, garlic powder, salt, and black pepper. Spread them evenly in the tray.
3. Bake the potatoes for about 25 minutes, stirring halfway through.
4. Remove the tray from the oven, add the sausage, and place the sliced onions on top.
5. Return the tray to the oven and bake for another 15–20 minutes, until the sausage is cooked through and the onions are softened.
6. Remove from the oven, sprinkle the cheddar cheese over the top, then make four small wells in the mixture and crack the eggs into each well.
7. Return the tray to the oven and bake for another 5–10 minutes, until the eggs are cooked to your liking.
