Pesto Tomato Pasta

It’s been raining here on the east coast for a couple of days and it looks like the next couple of days will be gloomy too. Which means all the comfort food, including this tomato pasta dish which is just divine and comes together in 15 minutes.

Ingridients

  • Olive oil
  • 1 tbsp butter
  • 1 pint cherry tomatoes
  • Salt
  • 1/3 cup pesto
  • 3/4 cup sour cream
  • 1/3 cup parmesan cheese, grated
  • 2/3 lbs spaghetti

Instructions

1. In a large pot, boil water and cook pasta until al dente.

2. Add olive oil and butter to a pan, once butter is melted, add tomatoes, season with salt and sauté for a couple of minutes.

3. Add pesto and sour cream to pan, mix everything and let cook for 4-5 minutes. Add Parmesan cheese and mix to combine. Add spaghetti and mix.
