One Pot Sausage, Broccoli & Parmesan Pasta

One pot sausage and broccoli pasta because I did not feel like doing dishes tonight. I used shells since that’s what I had, but honestly any pasta works. Everything cooks in one pot, the broth turns into the sauce, and you finish it with a lot of parmesan. Easy, delicious and very weeknight-friendly 🍝🫶

Ingredients

  • 1 lb Italian sausage, casings removed
  • 3 cups pasta (whatever type you like,I used shells)
  • 3 cups broccoli florets, cut small
  • 4 cups chicken broth
  • Optional: 1/4 tsp red pepper flakes
  • 3/4 cup finely grated Parmesan, plus more for serving

Instructions

1. Heat a large wide pot or deep skillet over medium-high. Add sausage and cook, breaking it up, until well browned and fat has rendered.

2. Optional: Stir in red pepper flakes and cook 15–30 seconds.

3. Add pasta and chicken broth. Stir and bring to a boil.

4. Reduce to a strong simmer and cook, stirring often, until pasta is almost al dente and liquid is mostly absorbed, about 9–11 minutes.

5. Add broccoli, stir, cover, and cook 3–4 minutes until tender.

6. Turn off heat. Stir in Parmesan.
