Creamy Beef Orzo
Orzo dinners have my whole heart and this one pan situation is exactly why! It’s so simple but tastes SO flavorful. I’ve already made it twice this week because I can’t get over how good it is
Ingredients
- 3 garlic cloves (or 1 elephant garlic clove)
- 1 leek
- Olive oil
- 1 lb ground beef
- 1 cup orzo
- 2.5 cups beef stock
- 0.25–0.5 cup parmesan cheese
- 3 tbsp cream cheese
- Salt to taste
Instructions
1. Grate or mince the garlic.
2. Slice the white/light green part of the leek, then wash the slices in a bowl of water.
3. In a pan over medium heat, add olive oil and the ground beef.
4. Break the beef apart and cook until mostly cooked through.
5. Push the beef to the side and add the leek and garlic.
6. Add the orzo and beef broth. Mix to combine.
7. Stir, then cover with a lid. Cook for about 10 minutes or until the pasta is al dente.
8. Add the parmesan cheese and cream cheese. Stir to combine.
9. Add salt to taste.
