Roasted Tomato Pizza

The clients have spoken: it’s pizza night again. 🍕 I made it with a veggie packed sauce, a premade crust and cheese. The result is always two very happy customers. What’s your kids go to dinner request? Make a big batch of this and keep it in the freezer along with some crusts for a quick dinner! 🌿 (Recipe makes enough for ~10 pizzas)

Ingredients

  • 10 tomatoes
  • 3 cups cherry tomatoes
  • 1 red onion, halved
  • 1 red bell pepper, halved (exclude if your kids are very picky)
  • 2 bulbs of garlic, top cut off
  • Olive oil
  • 1 tbsp salt (adjust to taste)
  • Optional: black pepper, basil, oregano 🌿
  • 1 premade pizza crust (or make your own)
  • 1 cup of mozzarella cheese 🧀

Instructions

1. Preheat oven to 425F

2. On a large baking sheet, spread the tomatoes, cherry tomatoes, onion, bell pepper, and garlic. Drizzle with olive oil and sprinkle with salt. Toss to coat.

3. Bake for 35–45 minutes. Transfer the roasted vegetables to a blender or food processor. Blend until smooth.

4. For a thicker sauce, pour the blended mixture into a saucepan and simmer on low heat for 10–15 minutes, stirring occasionally, until it reaches your desired consistency.

5. Spread out about 1 cup of sauce over a pizza crust, top with mozzarella cheese and bake in the oven at 425F for 10 minutes.
