Creamy Chicken Sausage & Rice Skillet
Calling this a recipe feels generous, but here we are and it’s delicious. Been cooking this for years and it heats up great for leftovers. If you want to you can sub the cream for another cup of broth. 💛
Ingredients
- 1 package 12 oz Trader Joe’s cheddar chicken sausage (or any chicken sausage you like), sliced
- 14 oz Trader Joe’s frozen bell pepper and onion mix, or about 2 cups fresh sliced bell peppers and onions
- 1 cup basmati rice
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup shredded Mexican cheese blend
- Olive oil
Instructions
1. Heat a drizzle of olive oil in a large skillet over medium heat.
2. Add the sliced chicken sausage and cook until browned. Remove from the pan and set aside.
3. In the same pan, add the bell peppers and onions. Sauté for a couple of minutes until they start to soften.
4. Add the rice and stir to coat in the oil and flavor.
5. Pour in the chicken broth and heavy cream, stir well,then cover with a lid. Cook until the rice is tender and the liquid has absorbed.
6. Stir in the cheese and the cooked sausage. Mix until everything is creamy and melted together.
