Taco Enchilada Bake
This enchilada casserole is an easy weeknight dinner that comes together with simple pantry ingredients but still feels so comforting. Layers of seasoned ground beef, black beans, corn, enchilada sauce, tortillas, and melty cheese bake together into a dinner that’s so flavorful and perfect for feeding the whole family! I love that it uses minimal prep and can easily be customized with your favorite toppings or spice level. Serve it with sour cream, avocado, cilantro, or whatever you have on hand for an easy dinner everyone will want again.

Preheat oven to 375°F.

In a large pan over medium heat, add ground beef and cook until fully browned. Add taco seasoning and water according to package instructions. (I only use half the bag of taco seasoning because I do find it a bit spicy, but it’s up to you.)

Place 2 tortillas in a baking dish. Top with half the ground beef, half the corn, half the black beans, and half the enchilada sauce. Spread evenly over the tortillas, then top with half the cheese.

Repeat with 2 more tortillas and the remaining ingredients.

Bake for 15–20 minutes, until hot and bubbly.
Notes & Tips
If you’re a bit weak like me you will find the Trader Joe’s enchilada sauce a bit spicy too. So keep that in mind!
