Cook basmati rice according to package instructions.

While rice is cooking, heat a pan over medium-high heat. Add a drizzle of olive oil.

Slice chicken sausage links and add to the hot pan. Sauté until browned and fully cooked through.

Add spinach to the pan and cook until wilted, stirring so it doesn’t stick. Add a little more olive oil if needed.

Once rice is done, remove from heat and stir in Parmesan cheese.

Squeeze in the juice of 1 lemon and mix until combined.

Add the cooked sausage and spinach mixture into the rice and stir everything together until evenly combined.
