    Preheat oven to 425°F. Drizzle a sheet pan with olive oil or line with parchment paper.

    Add chicken thighs, potatoes, onion rounds, and bell pepper to the pan.

    In a bowl or cup mix melted butter, olive oil, lemon zest, lemon juice, Dijon mustard, garlic, salt, pepper, and oregano.

    Drizzle the sauce over everything. Use your hands or forks to mix well and evenly coat.
