Charcuterie Pasta Salad

I made charcuterie board pasta with Brami’s curly mac and my family didn’t leave a single bite! What I love about Brami is that it’s made with just two ingredients, Italian durum wheat and lupini beans, so it actually tastes like real pasta, not like a health food compromise. Cheddar, salami, basil, olives, garlic and olive oil, and that’s the whole recipe. This is an easy way to get more protein into a family meal without having to think too hard about it. 21 grams of protein per 3.5 serving of just the pasta!

Ingredients

Instructions
- 1
Bring a large pot of water to a boil. Salt the water generously and add the pasta. Cook for 9–11 minutes, until the pasta has your desired bite. Drain and do not rinse.
- 2
While the pasta cooks, grate the garlic and Parmesan. Cube the cheddar and salami. Roughly slice the olives.
- 3
In a small saucepan over low heat, warm the olive oil just until heated through. Do not let it simmer or brown.
- 4
Add the grated garlic to a large mixing bowl. Pour the warm olive oil over the garlic and stir. Let it sit for 1-2 minutes to lightly mellow the garlic.
- 5
Add the cheddar, salami, olives, and drained warm pasta to the bowl. Toss well so the oil coats everything evenly.
- 6
Tear in the basil, add the Parmesan, and season with salt to taste. Toss again.
- 7
Serve at room temperature or chilled
