Slice potatoes in half or quarters depending on size.

Slice bell peppers and dice zucchini.

Add potatoes, bell peppers, and zucchini to a sheet pan. Drizzle with olive oil and season with salt, then toss to coat evenly.

Add chicken thighs on top of the vegetables. Season chicken with salt.

Add dollops of Boursin cheese over the pan. Optional: mix the Boursin with a little lemon juice before adding for extra flavor.
