Stir together the softened cream cheese (or whipped cream cheese), Dijon mustard, and cranberry sauce until smooth.

Add the diced celery, diced apple, drained tuna, lemon juice, salt, and black pepper. Mix until evenly combined.

Lay out both puff pastry sheets and spread the tuna mixture evenly between them.

Sprinkle each sheet with 1/2 cup of mozzarella cheese.

Roll each sheet tightly into a log, then slice into pinwheels.
