Sheet Pan Chicken, Potatoes, Bacon & Green Goddess

Ingridients

  • 3–4 medium potatoes, thinly sliced
  • 1 bell pepper, sliced
  • 1½ lbs boneless, skinless chicken thighs
  • 5–7 slices of bacon
  • 8 oz green goddess dressing

Instructions

1. Preheat the oven to 400°F (200°C).

2. In a large bowl, combine the potatoes, bell pepper, chicken thighs, and 7 oz of the green goddess dressing. Toss until everything is evenly coated.

3. Spread the mixture on a baking sheet and bake for 20 minutes.

4. Remove the pan from the oven, add the bacon slices on top, and bake for another 20 minutes, until the chicken is cooked through, the potatoes are tender, and the bacon is crispy.

5. Drizzle the remaining dressing over the finished dish and serve warm.
