Vodka Sauce Soup

Made a simple and comforting vodka soup using @Bertolli_us Vodka Sauce, and it came together so easily! The sausage, pasta, and cheese turn into such a cozy bowl, and the sauce adds all the flavor without much effort. A great weeknight option when you want something warm and satisfying!

Ingredients

  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 pound Italian sausage
  • 1 teaspoon salt
  • 1 bottle Bertolli vodka sauce, 24 oz
  • 6 cups chicken broth
  • 1.5 cups dry ditalini or other small pasta
  • 2–3 cups baby spinach
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, shredded

Instructions

1. Heat a large pot over medium heat and add the olive oil.

2. Add the Italian sausage and cook, breaking it up, until mostly browned.

3. Add the diced onion and cook for 2–3 minutes, stirring occasionally, until softened. Season with the salt.

4. Add the garlic and cook for about 30 seconds, until fragrant.

5. Stir in the vodka sauce and chicken broth. Increase the heat and bring to a gentle simmer.

6. Add the pasta and cook for about 10 minutes, stirring occasionally, until the pasta is tender.

7. Stir in the spinach, mozzarella, and Parmesan. Cook until the spinach wilts and the cheese melts into the soup, making it creamy.

8. Serve hot with additional Parmesan cheese
