Creamy Bacon Orzo Bake

One tray dinners have my whole heart 🫶 Minimal dishes, so flavorful, low effort but feels a little fancy. This baked orzo with crispy bacon, tomatoes, and creamy stracciatella is sooo good. Exactly the kind of recipe I reach for on busy weeknights. Let me know if you try 🧡

Ingridients

  • 1 lb orzo
  • 1 and 1/2 cups cherry tomatoes, halved 🍅
  • 1 red onion, diced
  • 3 cups beef broth
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 4 strips bacon, chopped 🥓
  • 8 oz stracciatella cheese 🧀

Instructions

Preheat oven to 375°F.

In a large baking dish, combine orzo, cherry tomatoes, red onion, seasonings, and broth. Bake for 20 minutes.

Remove from oven and scatter the bacon pieces over the top. Return to the oven and bake for another 15–20 minutes, until the bacon is crisp and the orzo is tender.

Remove from oven, top with stracciatella, and swirl it through before serving.

If not served right away or reheating, you will notice that orzo gets a bit dry. Optional tip is to add a small splash of liquid, broth/water/cream before microwaving or reheating on stove
