40 clove chicken
A bad day to be garlic.. or the best day if you like garlic. tender chicken thighs + buttery, lemony sauce = a surprisingly good meal. Would you try this at your next dinner?
Ingredients
- 40 cloves garlic (or 10 cloves elephant garlic)
- ½ cup white wine
- 1 white or yellow onion, diced
- 1½ lb chicken thighs, boneless and skinless
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp thyme
- 1 tsp oregano
- 1 cup chicken broth
- ¼ cup parsley, chopped
- ½ lemon, juiced
- Olive oil
- Butter
Instructions
1. Heat a large pan over medium heat and add a splash of olive oil and butter.
2. Add the garlic and sauté for 20 seconds.
3. Pour in the white wine and let it simmer for a few minutes, stirring occasionally.
4. Add the diced onion and sauté for another 5 minutes.
5. Place the chicken thighs in the pan, season with salt, pepper, thyme, and oregano, and cook about 4 minutes per side until golden.
6. Add the chicken broth and cover the pan. Let it simmer for about 20 minutes.
7. While the chicken cooks, chop the parsley.
8. Mash the garlic into the sauce, stir in the lemon juice and parsley, and adjust the broth if needed.
9. Serve over rice or pasta.
