Artichoke and Spinach Potato Gratin

Ingredients

  • 3.5 lb potatoes, thinly sliced
  • 2 tubs Trader Joe’s spinach & artichoke dip
  • 1 cup heavy cream
  • 0.5 cup grated parmesan 🧀
  • 1 cup grated Gruyère or cheddar
  • salt and pepper to taste

Instructions

1. Heat the oven to 400°F.

2. Thinly slice the potatoes, add them upright in an oven-safe pan or tray, packing them in so they support each other.

3. Add the spinach–artichoke dip to a pot on low heat, let melt then add heavy cream and stir in the parmesan until melted

4. Pour the hot sauce evenly over the upright potatoes, making sure it drips between the slices.

5. Cover the pan with a lid or foil and bake for 30 minutes.

6. Uncover, add the Gruyère evenly over the top, and bake for another 15 minutes until the cheese is melted and the top is golden.
