Skillet Mashed Potatoes
This is such a nice, warm dish, so flavorful. Perfect for the holidays and still easy enough for a weeknight. I love how the skins get a little crisp, the broth adds so much flavor, and it all comes together in one pan.
Ingredients
- 7–8 medium potatoes, halved
- 5 cloves garlic, peeled
- 1 cup chicken broth
- 4 tablespoons butter, divided
- Olive oil, for cooking
- ⅓ cup heavy cream
- Salt, to taste
Instructions
1. Halve the potatoes and peel the garlic cloves.
2. In a large pan, drizzle in some olive oil and let it heat up over medium heat. Add 2 tablespoons of butter and let it melt.
3. Place the halved potatoes cut side down in the pan. Add the garlic cloves around them and sauté for 1–2 minutes.
4. Season lightly with salt, then pour in 1 cup of chicken broth.
5. Cover with a lid and cook for 20 minutes, or until the potatoes are soft and easily pierced with a fork.
6. Once the potatoes are tender, mash everything directly in the pan.
7. Add 1/3 cup heavy cream and the remaining 2 tablespoons of butter. Mash until creamy and smooth.
