    Wash and cook rice

    While rice is cooking, detail shrimp. Peel and devein if necessary. Cook shrimp in some olive oil on medium heat in a large pan. Season with salt and pepper. Add zest of one lemon. Mix to combine, and cook shrimp until done. Flip halfway through.

    Add spinach and let wilt for a minute or two, add coconut aminos and cooked rice. Mix everything and add parmesan cheese.

    Serve with black pepper and parmesan cheese
