Cut your steak into bite size pieces. Heat the olive oil and butter in a large skillet over medium high heat, then add the steak in a single layer. Season with salt and black pepper. Sear on both sides until you hit your preferred doneness, then remove to a plate and set aside. Leave all those browned bits in the pan.

Add the diced onion to the same pan and saute for a couple of minutes until it starts to soften.

Add the salt, garlic powder, paprika, and thyme to the onions. Stir everything together and let it cook another minute or two.

Add the potatoes and beef broth, stir, then cover with a lid and let it cook for about 10 minutes. You want the potatoes nearly tender.

Add the broccolini to the pan and stir. Put the lid back on and cook a few more minutes, until both the potatoes and the broccolini are done.

Pour in the heavy cream and stir. Cover and let it cook for a minute so the sauce comes together.

Add the steak bites back in along with any juices from the plate. Top everything with parmesan, cover, and cook one more minute until the cheese has melted into the sauce.
