    Heat the oven to 400F. Toss the diced sweet potatoes with a drizzle of olive oil, salt and pepper. Spread on a baking tray in a single layer and bake for 20 to 30 minutes, until soft. Remove from the oven.

    Rinse the quinoa, then simmer in twice its volume of water for about 15 minutes. Fluff with a fork and set aside.

    While those cook, dice the cucumber, finely chop the onion, roughly chop the pistachios, and drain and rinse the chickpeas.

    Pat the halloumi slices completely dry with paper towel (surface moisture is what makes it stick). Heat 1 tablespoon of olive oil in a large non-stick pan over medium heat, then lower the heat slightly. Add the halloumi in a single layer with room around each slice. Leave it undisturbed for 2 to 3 minutes so a golden crust forms before you move it. Flip once and cook the other side for another 2 minutes, until golden on both sides.

    In a large bowl, combine the quinoa, sweet potato, chickpeas, cucumber, onion and pistachios. Add the fried halloumi and the feta cheese. Pour over the remaining olive oil and the lemon juice and zest, season with salt and pepper, and stir gently to combine.

Notes & Tips

You ca swap halloumi for grilled chicken, swap quinoa for bulgur or couscous, make it vegan by dropping the halloumi and adjust herbs if you don't enjoy cilantro.
