Heat olive oil in a large skillet or pot over medium heat. Add chicken sausage and cook until browned. Remove and set aside.

In the same pan, add pasta and pour in chicken broth. Bring to a boil, then reduce to a simmer. Cook until pasta is al dente and most of the broth is absorbed (about 10–12 minutes).

Stir in cream cheese and sour cream until smooth and melty.

Mix in spinach, Parmesan, and the cooked sausage. Stir until spinach wilts and everything is creamy and well coated.
