Season the chicken thighs generously with salt. Heat the olive oil in a Dutch oven over medium high and sear the thighs until browned and cooked through, about 5 to 6 minutes per side. Move them to a plate and let them rest while you build the soup.

Lower the heat to medium and add the butter. Once it melts, add the diced onion and cook until soft, about 4 minutes. Stir in the garlic powder, oregano, cumin, salt and pepper and cook until fragrant, about a minute.

Sprinkle the flour over the onions and stir constantly for 1 to 2 minutes. It will look dry and pasty. That’s exactly right.

Pour in the chicken broth, whisking so it stays smooth. Add the potatoes and any juices from the chicken plate and bring it up to a simmer.

Simmer uncovered until the potatoes are tender, about 15 minutes. While they cook, chop the rested chicken into bite size pieces.

Turn the heat to low. Add the chicken back in along with the cream and Parmesan and warm through gently, about 3 minutes. Do not let it boil.

Add the spinach a handful at a time and stir until wilted, about a minute. Taste, adjust the salt, and serve.
